Smothered Chicken with Rice<\/strong><\/p>\n Ingredients<\/strong> Instructions<\/strong> Cooking Directions<\/strong> Lightly spray or oil the foil and place the cubed chicken breasts on foil. Season with margarine, salt and pepper. Seal foil packet and place on a grate over hot coals. \nThis recipe will feed two hungey campers and can be created using any brand or combination of rice mix such as Zatarain’s New Orleans Style Smothered Rice. You can use 6 to 8 ounces of rice mix for every 4 chicken breasts.<\/p>\n
\nThe trick is to cut a double layer of heavy duty foil that is large enough to hold 4 chicken breasts sliced into cubes or strips and the entire package of rice.<\/p>\n
