Smothered Chicken with Rice

Ingredients
4 chicken breasts
1 6-8oz box of chicken rice mix
2 tbsp margarine
your favorite seasonings
1 1/2 cup water

Instructions
This recipe will feed two hungey campers and can be created using any brand or combination of rice mix such as Zatarain’s New Orleans Style Smothered Rice. You can use 6 to 8 ounces of rice mix for every 4 chicken breasts.

Cooking Directions
The trick is to cut a double layer of heavy duty foil that is large enough to hold 4 chicken breasts sliced into cubes or strips and the entire package of rice.

Lightly spray or oil the foil and place the cubed chicken breasts on foil. Season with margarine, salt and pepper. Seal foil packet and place on a grate over hot coals. Cook the chicken for approximately 20 minutes until brown.

Open the foil packet and add the rice mix directly over the chicken, add water and gently mix, if mix is too thick add more water – reseal the packet and cook over hot coals for another 25-30 minutes until done.
