For many campers cooking at the campsite is a major highlight of the canoe camping adventure, and mountain pies are an old time favorite for both kids and adults.

Ham and Potato Foil Bake

Ingredients:

  • Sliced or Cubed Ham
  • Sliced or Cubed Potato
  • Sliced or Cubed Sweet Onion
  • Sliced or Cubed Green Pepper
  • Sliced Mushroom

Directions:
Place all ingredients in two layers of foil and close into a tightly formed packet. Cook on medium hot coals for approx. 1/2 hour turning occasionally (do not cook in hot flames).

Pizza Style Mountain Pies

Ingredients:

  • Sliced Bread
  • Pepperoni
  • Mushrooms
  • Pizza or Spaghetti Sauce
  • Mozzarella Cheese

Directions:
Place one slice of bread on a greased mountain pie iron. You can spray the mountain pie iron with nonstick spray or butter the outer sides of the bread. Add pizza sauce, cheese and toppings to the slice and top with the other slice. Close the iron and place into hot coals for several minutes until toasted.

Dutch Oven Beef Stew

Ingredients:

  • 1 Pound of Ground Beef
  • 5 Sliced Potatoes
  • 2-3 Sliced Onions
  • 5-8 Large Sliced Carrots
  • 1 cup (2 sticks) of Butter
  • 2 Cloves Garlic
  • Salt and Pepper to taste

Directions:
Put one layer meat in the dutch oven, then cover with layer of chopped onions, potatoes, garlic and carrots. Add one portion of butter. Repeat the layers until finished. Cook over hot fire for at least one hour.
